Ingredients
- 8 ounces fresh crabmeat -- shredded
- 1 cup cooked spaghetti or linguine
- 2 eggs -- beaten
- 3 green onions -- finely chopped
- 1/4 cup dry bread crumbs
- 2 tablespoons fresh cilantro -- snipped
- 2 teaspoons olive oil or cooking oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons cooking oil
- Cilantro Mayo
- 1/4 cup mayonnaise
- 1 tablespoon cilantro -- finely snipped
- 1/2 teaspoon lime peel -- finely shredded
- 1 tablespoon fresh lime juice
Instructions
- Cut the cooked spaghetti or linguine into 1-inch pieces. Set aside.
- In a large mixing bowl combine the eggs, green onion, bread crumbs, cilantro, green pepper, olive oil, salt and pepper.
- Add crabmeat and spaghetti and mix well.
- Using about 2 tablespoons of mixture for each crab cake, shape into 12 patties, about 1/2 inch thick.
- In a large skillet over medium heat, cook the patties, a few at a time, about 3 minutes on each side or till golden brown. Keep warm while preparing remaining cakes.
- Serve with the Mayonnaise mixture.
- Cilantro-Lime Mayonnaise:
- Mix all ingredients in a small bowl. Cover and chill till serving time.
- Makes 1/2 cup.
